Getting Saucy with Vegetables

Simple sauces are a great way to make cooked veggies into a delightful, healthy meal. Start by simply cutting up some of your favorite veggies….broccoli, cauliflower, carrots, celery, zucchini, yellow crookneck squash, onions, eggplant, kale, cabbage, brussels sprouts…your options are endless! Then either bake, steam, or sauté them to your desired consistency. Then serve yourself a big bowl and top with one of the delicious sauces below. Enjoy this for lunch or dinner!

Make a Dish of all of your Favorite Veggies & Prepare them via any of the preparations below:

  • Steaming – takes only 10-15 min: just put cut up veggies in a steamer over boiling water
  • Baking at 450 for 30-45 min (can top with olive oil and your favorite spices…rosemary and thyme are my favorites, then add salt and pepper)
  • Sauté – in oil over medium-high heat until of desired consistency

Be bold and creative when making these sauces! Use more or less of any ingredient to adjust the taste to your liking, and feel free to add/subtract anything from the ingredient list as well!

 

Pesto Sauce

Put all ingredients into a high powered blender:

Juice of 1.5 lemons
3 cups walnuts
salt
1/3 c fresh basil
(might need some water or olive oil to get it creamy)

 


Red Sauce

Put all ingredients into a high powered blender:

  • 2-3 tomatoes
  • 1-2 red peppers
  • handful of basil
  • chopped red onion
  • salt

 

 

 

 


Peanut Ginger Lime Sauce

Put all ingredients into a high powered blender:
2 c peanuts
2“ fresh ginger root
juice of 3 limes
powdered stevia for a bit of sweetness
tad of water

 


Curry Sauce

  • sauté some onions in a pan with coconut oil/butter and sprinkle with curry powder & salt
  • once the onions are semi-soft, add canned coconut milk (judge how much by how runny or thick you want the sauce to be)
  • sauté on medium heat
