16. Sweet Potato Noodles and Oven Roasted Chicken

Healthy, protein-packed and ready in less than 30 minutes! Method below 👇🏼 Used @veggienoodleco sweet potato noodles to save some time from spiralizing them myself! Just sautéed them over medium heat in about 1 tbsp. @omgheebutter and 2 cloves minced garlic. Season with salt and pepper to taste. Cook until tender, about 10 minutes. Pan Seared Oven Roasted Chicken Directions: Preheat oven to 375. Rinse and pat dry chicken. Season with Montreal (or salt and pepper), to taste. Heat cast iron skillet (or oven safe pan) over medium-high heat with tsp of olive oil. When hot, add chicken and brown on both sides for 3-4 minutes each. Transfer to oven. Bake 15-20 minutes! Top noodles and chicken with chopped fresh cilantro and done!
